In another bowl, mix together the pastry flour, unbleached flour, baking soda, cinnamon, salt and ginger; add to buttersugar mixture; mix well.
Stir in oats, cranraisins and chips; mix well.
Use a small cookie scoop or just drop by tablespoon onto parchment paper or on an ungreased cookie sheet.
Bake for 11 to 13 minutes, or until brown around the edges.
Let cool in pan for about 1 minute.
Move to a plate, or wire rack to cool completely.
Makes about 3 to 4 dozen cookies, depending on size.
